Directions
Pour dressing over cooked and cooled rice and toss well with fork. Add chopped veggies and toss again. Add oranges last and toss gently so as not to break sections.1 c raw jasmine rice; cooked ½ c red pepper, chopped ½ c green pepper, chopped ½ c cucumber, peeled and chopped 1/3 c red onion, chopped ¼ c cilantro, chopped 1 11 oz can mandarin oranges, drained Dressing: 2 tbs tarragon vinegar 1 tbs sugar 2 tbs lime juice ½ tsp dry mustard 1 clove garlic, minced 1 tsp gresh ginger, minced
