Thai Pork Chops

Directions
Sprinkle chops with ½ tsp salt. Heat oil over med-high heat in large skillet. Sauté chops until golden brown @ 3 min on each side. Remove chops. Reduce heat to low, add the scallions, garlic, and ginger. Sauté 2 min until tender. Add tomatoes, coconut milk, soy sauce, brown sugar, lime juice, and remaining ½ tsp salt. Raise heat to medium and bring to a simmer. Add chops, cover and cook 5 min until cooked thru. Transfer chops to plates, add cilantro to the sauce and spoon over chops.
