Directions

Mash the tofu in a mixing bowl, but leave some texture to the mixture, then add remaining ingredients. Fold and mix until well combined.

  • 2 T. chopped fresh Italian parsley
  • 1T. chopped fresh dill
  • 1/2 c. diced scallions
  • salt and freshly ground pepper to taste

Comments

Note: Store in the refrigerator at least half an hour before serving. If you prefer a more mild flavor, this salad is perfectly delicious without the addition of cayenne pepper.
