In container w/ tight fitting lid, shake dressing ingredients until well mixed. Divide spinach leaves among 4 serving plates. Top each with chicken, mango, grapes, onions, and pecans. Drizzle with dressing. Dressing: ½ tsp grated lime peel 2 tbs fresh lime juice 2 tbs EVOO 1 tbs water 2 tsp honey ½ tsp ground ginger Salad: 6 c fresh baby spinach 2 c cubed cooked chicken breast 1 ripe mango, peeled and cubed 1 c red seedless grapes, halved 2 med green onions, sliced 2 tbs coarsely chopped pecans, toasted
