Directions

Cook pasta w/out salt as directed, adding broccoli during last 3 min of cooking time; drain. In skillet, heat oil over med heat. Add chicken; cook 4 to 5 min, stirring frequently, until chicken is no longer pink in center. Remove from skillet. Increase heat to med-high. In same skillet cook and stir mushrooms and garlic 2 min. stir in tomatoes, onions, basil, and pepper flakes; cook and stir 1 min longer. In 2c glass measuring cup, mix cornstarch and broth until smooth. Add to vegetable mixture in skillet. Cook and stir 1 to 2 min or until sauce is thickened and bubbly. Stir in pasta mixture and chicken; cook and stir until thoroughly heated. Sprinkle with cheese.

  • 2 med green onions, sliced
  • ¼ c chopped fresh or 2 tsp dried basil leaves
  • ¼ tsp crushed red pepper flakes
  • 4 tsp cornstarch
  • 1 c chicken broth
  • ½ c crumbled feta cheese (2oz)
