Directions

In medium bowl, beat eggs, water, salt, and chili powder with whisk until blended. Heat skillet over med heat. Add onions; cook for 1 to 2 min or until crisp tender. Reduce heat to med-low. Add egg mixture; cook 2 to 3 min, stirring frequently, until eggs are set but still moist. Remove from pan; keep warm. Spread each of 2 tortillas w/ 2 tbs refried beans and 1 tbs salsa. Top with egg mixture, cheese and remaining tortillas. Wipe skillet. Heat over med meat. Cook each quesadilla in skillet 3 min, turning carefully halfway through cooking, until crisp. Cut each quesadilla into quarters. Serve with sour cream. ½ c fat free eggs/ 2 eggs 1 tsp water Dash of salt ¼ tsp chili powder 2 med green onions, sliced 4 white corn tortillas (6 in) ¼ c fat free refried beans 2 tbs chunky style salsa ¼ c reduced fat sharp cheddar cheese Reduced fat sour cream (optional)
