Directions

In food processer, place all hummus ingredients except basil; process 1 to 2 min or until smooth. Add basil; pulse to mix. To assemble sandwiches, spoon about 2 tsb hummus on each pita bread half. Place spinach leaves, onion and tomato slices in each.

  • Hummus:
  • 1 (15 or 19oz) cannellini bean, drained and rinsed
  • 2 tbs fresh lemon juice
  • 1 tbs evoo
  • ¼ tsp salt
  • 1 small clove garlic, finely chopped
  • 1/8 tsp cayenne pepper
  • 2 tbs fresh basil leaves
  • Pitas:
  • 4 pitas, cut in half to form pockets
  • 1 ½ c loosely packed fresh spinach
  • 4 slices of red onions
  • 8 thin slices of red tomato, cut in half
