White Bean Hummus Pitas

Directions
In food processer, place all hummus ingredients except basil; process 1 to 2 min or until smooth. Add basil; pulse to mix. To assemble sandwiches, spoon about 2 tsb hummus on each pita bread half. Place spinach leaves, onion and tomato slices in each.

- Hummus:
- 1 (15 or 19oz) cannellini bean, drained and rinsed
- 2 tbs fresh lemon juice
- 1 tbs evoo
- ¼ tsp salt
- 1 small clove garlic, finely chopped
- 1/8 tsp cayenne pepper
- 2 tbs fresh basil leaves
- Pitas:
- 4 pitas, cut in half to form pockets
- 1 ½ c loosely packed fresh spinach
- 4 slices of red onions
- 8 thin slices of red tomato, cut in half
