Directions

Preheat broiler. Spray 10-inch nonstick skillet with heat-proof handle with cooking spray. Heat over medium heat. Add sausage, peppers and tortillas. Cook and stir 4 minutes, or until tortillas are lightly browned. Reduce heat to low. Pour Egg Beaters evenly into skillet. Cover; cook 9 minutes, or until bottom of frittata is set but top is still slightly moist. Remove lid from skillet. Place skillet under broiler. Broil 2 minutes, or until top is set but not brown. Remove frittata from broiler. Top with cheese, tomatoes and cilantro, if desired; let stand until cheese melts. Cut into 4 wedges.
