1. preheat oven to 425 degrees. place bread shells on a very large baking sheet. bake for 5 min. remove from oven; sprinkel w/ cheese. top w/ tomato slices. drizzle tomato slices w/ EVOO. if desired, sprinkel w/ toasted pine nuts. sprinkle w/ basil.

- 4 plum tomatoes or 2 med tomatoes, thinly sliced
- 2-3 teaspoons EVOO
- 1/4 c pine nuts, toasted (optional)
- 1/2 c finely shredded fresh basil
