Turkey-Bacon Turnovers

Preheat oven to 400°; line a baking sheet with parchment. Prepare turkey, cheese, and bacon. Roll pastry on a floured surface to 11" square. Cut into 4 squares; spread each with 1 t. mustard. Arrange turkey, bacon, and cheese on half of each pastry square, tearing or folding them to fit. Brush edges of pastry with egg wash, fold to form a triangle, and seal shut using the tines of a fork. Place turnovers on prepared baking sheet, brush with more egg wash, and sprinkle with kosher salt. Bake 25 minutes, or until pastry is golden and crisp. Stir vinegar, sugar, salt, and pepper together in a bowl. Add remaining ingredients and toss gently to combine.
