Zucchini Muffins

Preheat oven to 350. Whisk together all dry ingredients in a large bowl. Mix wet ingredients, including zucchini together in a medium bowl. Stir wet ingredients into dry mix slowly, blending well. Pour mixture into a greased 8 x 4 loaf pan or greased muffin tins, depending on your preference. Bake for approximately one hour until golden brown and toothpick comes out clean. Total Net carbs: 3.5 grams per serving
