Saucy Italian Fish Fillets
Serves N/A
Directions
Preheat oven to 450°F. Cook pasta according to package directions, except omit any salt or fat. Meanwhile, spray 13x9-inch baking dish with cooking spray. Place fish in prepared dish, tucking under any thin edges. Spray evenly with cooking spray; sprinkle with lemon pepper. Bake 8 to 10 minutes, or until fish flakes easily when tested with fork. Meanwhile, spray medium saucepan with cooking spray; heat over medium heat. Add mushrooms, bell peppers and onions; cook 5 minutes, or until bell peppers and onions are crisp-tender, stirring frequently. Stir in pizza sauce; cook 1 minute, or until heated through, stirring occasionally. Remove fish from oven. Drain any liquid from baking dish. Spoon pizza sauce mixture over fish; sprinkle with cheese. Continue baking 1 minute, or until cheese is melted. Drain pasta; place on serving platter. Spray evenly with cooking spray; top with the fish and sauce.
