Cook sausage in a large nonstick skillet over medium heat,crumbling with a wooden spoon, until lightly browned, 3 to 4 minutes. Transfer to a plate lined with paper towels to drain. 3. Add onions and bell pepper to the pan and cook, stirring often, until softened, 3 to 4 minutes. 4. Whisk eggs, milk, salt and pepper in a large bowl until blended. 5. Spread bread in the prepared baking dish. Scatter the sausage and the onion mixture evenly over the bread. 6. Brush with mustard. Sprinkle with cheese. Pour in the egg mixture. 7. Cover with plastic wrap and refrigerate for at least 2 hours or overnight. 8. Preheat oven to 350 degrees F.
